Food & Cooking & Culture

Some of us are hardcore Fox Life fans, even if we cook only once a while, our 'ammama'(a whole post is needed to reveal her..so sometime later..) being an exception. Whenever I try something it ends up in 50-50 chance, flop/success. That doesn't stop me taking a chance with weird combinations and own cooking techniques! Let it be...As for today, I spend the whole day watching this single channel, living Fox Life, slice of life.

Now I just can't remember the programme.. it was either Fearless Chef with Kiran Jethwa or David Rocco's Dolce India..which featured Rajasthan Thar desert and a  Rajput hunter's traditional cooking method. Good God! Never seen before! The say is that when hunters set out on a journey they won't have much time to spent for cooking. So they resorted to slow cooking in the scorching desert heat. And once they are back after hunting they could have the meal outright.

Here the meal was simple. Fresh goat meat (sliced to large pieces) was smeared in just salt and chilli paste and added with lemon juice. Each piece was covered fully by enormously large chapathis/rotis. A torn out sack will be effectively used to hold and cover those pregnant chapathis. Now you dig somewhere or anywhere in the vast stretch of desert and place these well enveloped sacks inside. Cover it with more hot sand (what else can you find!) and light fire on top, to add to the heat. Slow cooking can take many many hours..or may be till the hunters are back. Now slowly dig out for the unmatched tasty meal! Just watching it put a big smile on my face.:-)

Travel is not just about finding new places and people..it has lot to do with the local cuisine. As Jamie Oliver puts it in Jamie's Great Britain, the English Piccalilli and even that unique
Worcestershire sauce had its humble beginnings from India! And he adds, trade routes are food routes too...oh yes we already know a spice route..there can be a pulao route, pickle route too. Food thus becomes spread of culture. Respect culture, try hands on cooking.;-)
